Easy and delicious Vegan Chocolate Chip Zucchini Bread!
Tending to my vegetable garden is one of my favorite summertime hobbies. Indigo loves to help me weed, water and plant new veggies. His favorite activity is picking the vegetables! Right now our zucchini plants are really flourishing! It seems like every other day, there’s a new zucchini to pick. I usually sauté them in a pan and add them to salad, but lately I’ve been craving something different.
Ever since making the switch to a vegan diet last year, I’ve been trying to re-create some of my old favorites. After a few tries, this recipe for Vegan Chocolate Chip Zucchini Bread turned out exactly the way I wanted! It’s light, flavorful and the sprinkling of chips add the perfect amount of sweetness with overwhelming the bread.
This is one of those “you’d never guess it was vegan” recipes. In my experience, baking without eggs, full fat milk and butter has been hit or miss. This Vegan Chocolate Chip Zucchini Bread is definitely getting filed under “hit”!
