The cold weather has me craving comfort food! I decided to start experimenting with vegan versions of meatloaf. I’m a big fan of chickpeas. Not only do they taste great, but they’re also so versatile! Chickpeas are high in protein and make a great substitute for meat. 

This recipe is easy to make, requires little prep time and it’s ideal for leftovers!

Ingredients

  • 2 14.oz cans of chickpeas (drained and rinsed)
  • 1 small onion (diced)
  • 3 garlic cloves (minced)
  • 2 carrots (diced)
  • 2 celery stalks (chopped)
  • 2 cups panko breadcrumbs
  • 1/2 cup unflavored almond milk
  • 3 tbsp. vegan Worcestershire sauce
  • 2 tbsp. tomato paste
  • 1 tbsp. soy sauce
  • 2 tbsp. olive oil
  • 2 tbsp. ground flax seeds
  • 1 tsp. liquid smoke
  • Black pepper (to taste)
  • For the glaze:
  • 1/4 cup tomato paste
  • 2 tbsp. maple syrup
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. soy sauce
  • 1 tsp. paprika

Instructions

  1. Preheat oven to 375 degrees. Line a 9 inch loaf pan with parchment paper.
  2. Combine all the meatloaf ingredients in a large bowl. Working in batches(if needed), roughly mix the ingredients in a food processor. Be careful not to over-mix! Over-mixing the ingredients will cause the meatloaf to be runny and mushy.
  3. Press the mixture into the loaf pan and bake for 30 minutes.
  4. Whisk the glaze ingredients together in a small bowl. After 30 minutes is up, remove the meatloaf and spread on the glaze. Cook for an additional 25 minutes. Let cool for 15 minutes and enjoy!

Preheat the oven to 375 degrees. Mix the ingredients (except for the glaze) together in a large bowl.

Using a food processor and working in batches, roughly combine the ingredients. Make sure you don’t over-mix! There should still be whole chickpeas. Over-mixing will cause your loaf to become soggy.

Line a 9 inch loaf pan with parchment paper. Press the mixture into the pan. Bake for 30 minutes. 

While the loaf is baking, prepare the glaze. Whisk the glaze ingredients together in a small bowl. 

Remove loaf after 30 minutes in the oven and spread the glaze on top.

Bake for an additional 25 minutes. Remove from the oven and let cool for 15 minutes before serving.
