Vegan Broccoli Mac & "Cheese"

As a working mom with 2 little ones, I’m always on the lookout for healthy meals that don’t take a lot of time to prepare and that don’t require a bunch of expensive, hard-to-find ingredients. Tofu is a refrigerator staple in my house. I love how versatile it is! I use it in everything from salads to smoothies to dessert! Today, I partnered with House Foods to check out their new children’s ebook The Tales of Tofu and to re-create one of the recipes found inside.

We decided to make a recipe from the children’s ebook The Tales of Tofu from House Foods, for Broccoli Mac & “Cheese”.  The Tales of Tofu is a sweet story about a superfood named Tofu who learns that by mixing with other foods, he can be anything he wants to be. You can download it yourself for free right here! The ebook also contains other quick, healthy and delectable recipes like Strawberry Papaya Smoothie and Tofu Tacos. Indigo and I read the book together and then got started on dinner. He was eager to help after reading the story and seeing all the tasty food we could make using tofu!

Indigo is already a big fan of tofu, mac & cheese and broccoli so I knew this recipe was going to be a hit! This Broccoli Mac & “Cheese” recipe is easy to make and it tastes delicious! It’s packed full of plant-based protein thanks to the tofu and the broccoli is a good source of fiber and calcium.

  1. Cook noodles until al dente. Drain pasta, reserving 1/4 cup of the pasta water. Prepare broccoli: Bring water to a boil and fit with a steamer basket. Add the broccoli and cover, cooking until bright green and not overly tender. In a pan set on medium-high heat, saute onion and garlic until tender.
  2. In a food processor, create tofu "cheese" sauce by combining onion mix, tofu, nutritional yeast, mustard, oil, salt and pepper, and pulse until smooth. Add water until desired consistency is achieved.
  3. Warm the "cheese" sauce on the stove top on low heat, stirring frequently (about 10 minutes). Add noodles and broccoli with cheese sauce and cook for additional 5 minutes. Serve warm.

The Broccoli Mac & “Cheese” recipe consists of a few easy steps. The noodles are cooked and then the broccoli.

The “cheese” sauce is cleverly made using House Foods Tofu Medium Firm. The tofu is mixed in a food processor, along with nutritional yeast, mustard, onion mix, and oil to create a sauce that’s the perfect compliment for the pasta and broccoli.

Then, the “cheese” sauce is heated on the stove. Mix everything together, season with some salt & pepper & enjoy!

Indigo and I both loved this Broccoli Mac & “Cheese”. It’s always a mom “win” when I can find a healthy recipe that he actually likes! We’re looking forward to trying the other recipes in The Tales of Tofu.
