As a working mom with 2 little ones, I'm always on the lookout for healthy meals that don't take a lot of time to prepare and that don't require a bunch of expensive, hard-to-find ingredients. He was eager to help after reading the story and seeing all the tasty food we could make using tofu!
Indigo is already a big fan of tofu, mac & cheese and broccoli so I knew this recipe was going to be a hit! This Vegan Broccoli Mac & "Cheese" recipe is easy to make and it tastes delicious! It's packed full of plant-based protein thanks to the tofu and the broccoli is a good source of fiber and calcium.

Vegan Broccoli Mac & Cheese
The Broccoli Mac & "Cheese" recipe consists of a few easy steps. The noodles are cooked and then the broccoli.
The "cheese" sauce is cleverly made using House Foods Tofu Medium Firm. The tofu is mixed in a food processor, along with nutritional yeast, mustard, onion mix, and oil to create a sauce that's the perfect compliment for the pasta and broccoli.
Then, the "cheese" sauce is heated on the stove. Mix everything together, season with some salt & pepper & enjoy!
Indigo and I both loved this Broccoli Mac & "Cheese". It's always a mom "win" when I can find a healthy recipe that he actually likes! We're looking forward to trying the other recipes in The Tales of Tofu.
