Vegan Rainbow Tacos with Tahini Lime Sauce

Rasing 2 small kids and working doesn’t leave a lot of time for cooking. Lately, I’ve been relying more and more on meal prep to ensure a healthy diet. In the coming weeks, I look forward to sharing more of my Vegan meal prep recipes and ideas. One of my go-to meal prep recipes is this Vegan Rainbow Tacos with Tahini Lime Sauce. I cook a batch of quinoa at the beginning of the week and use it in everything from wraps to salads. The Tahini Lime sauce is also great to make in large batches. The chickpeas are the only ingredient I cook as needed (I personally think they taste best when freshly prepared). I air fry them so it takes less than 15 minutes.

These tacos are easy, delicious and filling- thanks to the quinoa, avocado, and chickpeas! They’re ideal for a quick lunch or those busy weeknights when you want dinner on the table as soon as possible.

Instructions
  1. Cook chickpea in either an air fryer (370 degrees for 12 minutes) or roast in the oven (450 degrees 30-40 minutes).
  2. Cut & prepare the vegetables. For the Tahini Lime Sauce- add ingredients to a bowl and whisk.
  3. Fill the bottom of the taco with quinoa. Add vegetables, cilantro and chickpeas. Drizzle with Tahini Lime sauce.
