10 Minute Vegan Peach and Black Bean Tacos- a filling and delicious meal that's perfect for busy weeknights!
With a job and two young kids to take care of, the last thing I want to do is spend a lot of time cooking! 20 minutes is the maximum amount of time I like to spend in the kitchen. These 10 Minute Vegan Peach and Black Bean Tacos are fast, healthy and delicious! After I made them the first time, I immediately added them into my weekly dinner rotation. They require minimum cooking- just heat the black beans and tortillas. Already diced peaches (with no sugar added) and store-bought mango salsa cut down on the time even more.
This is the perfect meal for those evenings when you want something nutritious, but you're short on time.

- Small corn tortillas
- 1 15 oz can Black beans Drained and rinsed
- 1 Cup Diced peaches- no sugar added Drained
- 1 Avocado Diced
- Fresh Cilantro Chopped
- Fresh lime juice to garnish
- Mango salasa to garnish

- Warm black beans in a skillet. Remove from heat. Combine with diced peaches, avocado, and chopped cilantro.
- Warm toritllas in a skillet for a few minutes of medium heat. Spoon black bean mix on top and garnish with lime juice and mango salsa.
