My love affair with the slow cooker continues! These Slow Cooker Vegan Stuffed Peppers are too good to pass up. This is hearty, delicious and best of all…healthy! This is an easy meal that’s perfect for school nights. The recipe contains a handful of ingredients and this dish only takes 3 hours in the slow cooker.
I topped off the stuffed peppers with some fresh guacamole and cilantro. It was the perfect finishing touches that really brought out the flavor.

Vegan Slow Cooker Stuffed Peppers

Ingredients
- 5 Bell pepper- top & seeds removed
- 2 cups Quinoa- cooked and cooled
- 1 16 oz can drained Corn
- 1 16 oz can drained & rinsed Black beans
- 2 cups Fresh salsa
- 1 tsp Cumin
- 1 tsp Smoked paprika
- as needed Fresh cilantro
- 1 1/2 cups Guacamole
Instructions
Combine the quinoa, corn, black beans, salsa, cumin and paprika together in a bowlStuff each pepper and place inside the slow cooker. Cook on high for 3 hours.
Let cool. Serve with cilantro and guacamole.
