My vegetable garden has been providing me with tons of basil and tomatoes, so I figured it was time for a Vegan Pesto Pizza! This turned out so good. Plus, it was fast and incredibly easy to make. Instead of store bought vegan cheese I made my own by combining nutritional yeast and nuts. It’s not exactly like Parmesan cheese, but it’s delicious in its own right!
I used a store bought thin crust which makes the pizza-making experience a lot easier. I also cooked it on the grill (using a pizza stone) rather than the oven, because let’s face it- everything tastes better off the grill!
This Vegan Pesto Pizza is also the perfect fast and healthy meal to make for kids. Indigo loved this pizza and he ate 3 slices. Anything my picky eater toddler likes is an instant hit with me!
Vegan Pesto Pizza
Fast, easy & delicious!
- 1 packed cup Fresh Basil
- 2 Garlic cloves
- 6 tablespoons Nutritional yeast
- 1 Pizza Dough (already prepared)
- 1/2 cup Olive oil
- 1/4 cup Almonds
- 1/2 cup Cashews
- 1/2 cup Peptias
- 1 large, handful of small Tomatoes (large and small)
Put basil, pepitas, garlic cloves, 3 tablespoons of nutritional yeast and olive oil in a food processor. Blend until combined..Clean out the food processor and combine cashews, almonds and the rest of the nutritional yeast. Pulse until finely chopped. Spread the pesto out on the pizza. add the sliced tomatoes and top with the vegan cheese. Put on a pizza stone and grill for 5-7 minutes or until edges are browned.
