Vegan Latte Ice Cream Popsicles

     I’m a total coffee addict, but with summer in full force a hot latte has become less appealing. I decided to turn one of my favorite afternoon pick-me-ups into a refreshing vegan dessert! These Vegan Latte Ice Cream Popsicles are so easy to make. The bananas and dates give them a rich texture. Some added coconut milk in the popsicle maker gives them the pretty swirl. Fact: pretty food tastes better ?
     If you’re in the market for popsicle molds, I highly recommend these. They’re inexpensive, they work great, and they have a handy little drip tray at the bottom.

Vegan Latte Popsicles
Cool down with this delicious summer treat!
  • 2 ripe bananas
  • 3 pitted Medjool dates
  • 1/2 cup “lite” coconut milk
  • 1 Cup Cold Brewed Coffee with Almond Milk
Blend ingredients in a food processor until smooth.To get the swirl- Pour coconut milk into the bottom of the popsicle mold. Add the ice cream and pour in a little more coconut milk.

Prep time: 5 mins Cook time: Total time: 5 mins Yield: 6 popsicles
