Marbled Pumpkin Bars

October 8, 2015

These Marbled Pumpkin Bars have become my new favorite treat! The pumpkin makes them less rich than a brownie yet the chocolate swirl still provides sweetness. They’re really easy to make and they’re so delicious!

2 cups all-purpose flour

1 1/4 cups sugar
2 tsp. baking powder
2 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. ground cloves
4 eggs, lightly beaten
1 15-oz. can pumpkin
3/4 cup vegetable oil

1 cup semisweet chocolate chips
1 cup cream cheese, softened
1/4 cup sugar
1 egg
1 tbsp. milk

1. Preheat oven to 350 degrees. Spray a 15×10-inch pan with non stick oil. Mix together the flour sugar, baking powder, cinnamon baking soda and cloves in a large bowl. Add the four eggs, the pumpkin and oil; stir until combined. Spread batter into the prepared pan.
2. Microwave the chocolate chips for 1 minute or until melted; set aside. In a bowl, beat cream cheese and sugar with a mixer until combined. Beat in the egg, milk, and the melted chocolate. Spoon cream cheese mixture in mounds over pumpkin batter. Using a knife, swirl to marble.
3. Bake 25 to 30 minutes or until a toothpick comes out clean. Cool in pan on wire rack.
