Overnight Almond Chia Breakfast Pudding

If you’re pressed for time in the morning this is a great, healthy option for breakfast. Chia seeds are rich in fiber and protein which makes them really filling. The seeds soak up the almond milk overnight creating a tapioca-like pudding. Fresh fruit and a bit of honey take the place of white sugar.


[Combine almond milk, chia seeds, honey in a bowl. Mix well until combined and the mixture begins to thicken. Cover and store in the refrigerator overnight. The next morning add a bit of water or almond milk if the mixture has become too thick. Top with fruit and enjoy!]
