If you're pressed for time in the morning this is a great, healthy option for breakfast. Chia seeds are rich in fiber and protein which makes them really filling. The seeds soak up the almond milk overnight creating a tapioca-like pudding. Fresh fruit and a bit of honey take the place of white sugar.
- 1 ½ cups reduced sugar Vanilla Almond Milk
- ½ cup Chia Seeds
- 1 tablespoon Honey
- Fruit for topping (I used blackberries, banana and mango)
