quick & easy banana bread

November 21, 2013

I love cooking/baking so I decided to add a new feature to the blog! I’m excited to share some of my favorite recipes with you. This banana bread is super easy to make so it’s great for anyone who is just learning how to cook. (Tip- The trick to great tasting bread is to use bananas that are really ripe)
 Prep time- under 10 minutes

  • 1/2 cup (1 stick) butter, at room temperature, plus more for pan
  • 1/2 cup Agave (or regular sugar)
  • 2 large eggs
  • 1 1/2 cups unbleached flour
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 cup mashed ripe bananas (about 2)
  • 1/2 cup sour cream
  • 1/2 cup chopped walnuts

1) Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. Using an electric mixer cream butter and sugar for 1 minute. Add eggs, and mix.
2) In a In a large bowl, whisk together flour, salt, and baking soda. Add to the butter mixture, and mix. Add bananas, sour cream, and vanilla; mix to combine. Stir in walnuts, and pour into pan
3) Bake until a toothpick inserted into the center of the cake comes out clean, roughly 1 hour and 10 minutes. Let cool and enjoy!

Hi! Just made this last night, I replaced the sour cream with yogurt and the walnuts with coconut flakes and baked in muffin cups because I don't have pans. Mum says these are the best banana muffins she's ever had! Thanks for the recipe!

I set aside three very ripe bananas just this evening to make banana bread. Happened upon your recipe before looking for my old standby. New treat! Thank you
