  1. Preheat oven to 350 degrees. Grease a loaf pan.
  2. Combine the zucchini, coconut oil, apple sauce, maple syrup and vanilla extract in a bowl.
  3. Stir in the sugar, flour, baking soda and cinnamon. Add some of the chocolate chips (save the rest to sprinkle on top).
  4. Pour into the loaf pan. Sprinkle the rest of the chocolate chips on top. Cook for 40 minutes or until a toothpick inserted into the center comes out clean. Let cool & enjoy!
