I know what you’re thinking…chickpeas…in cookies??? It may sound a little odd, but these Vegan Chickpea Chocolate Chip Cookies are seriously delicious! Chickpeas are a lot like tofu, they have a mild taste and add texture to a recipe when blended. If you’re wondering if these cookies taste like chickpeas…they don’t! The consistency and taste is very similar to traditional chocolate chip cookies.
This recipe is easy to make and only requires a few minutes of prep. The ingredients (except the chocolate chips) are mixed in a food processor and then baked for 20 minutes. Totally foolproof!
This recipe could also be customized with nuts or even caramel chips. Enjoy!
