Vegan Butternut Squash Soup- a hearty, delicious & healthy way to get your soup on!
The local farm stands are stocked with my favorite fall veggies. Butternut squash (along with sweet potatoes and broccoli) is one of my autumn staples. I’ve been experimenting with some recipes and this Vegan Butternut Squash Soup was quickly added to my go-to list! Soup is the perfect meal this time of year and it reheats nicely which makes for great leftovers.
I know that cutting and roasting a whole butternut squash is a kind of a hassle…especially compared to those pre-cut and peeled chunks they sell in grocery stores. In my opinion, the difference in taste is worth the extra effort! The soup turned out rich, creamy and absolutely delicious. This isn’t “good-for-Vegan” soup…it’s good soup!
