Before I started following a vegan diet, banana bread was some of my favorite treats. A warm slice of banana bread with a cup of coffee started any day off right! My go-to banana bread recipe had butter, eggs and sour cream in it, so obviously when I ditched dairy this recipe had to go. Not wanting to be deprived of banana bread for the rest of my life, I decided to start experimenting and this Easy & Delicious Vegan Banana Bread recipe was born!
This Vegan Banana Bread can be made as 1 loaf or as 3 mini loaves. I like the mini loaves because they’re great for on-the-go and they’re perfect for sharing.
This recipe is foolproof and it only takes 5 minutes to prepare. The trick to making delicious banana bread is to use ripe bananas- soft with plenty of brown spots! The bananas that are just a little too ripe to eat make the sweetest and most moist bread.
Not only is this recipe healthier than many of the non-vegan banana bread recipes out there, you won’t even miss the dairy!
