We all know breakfast is the most important meal of the day, but it can be hard to find something healthy and filling when we’re short on time. These 4 Ingredient Vegan Oatmeal Breakfast Cookies are perfect for busy mornings! You can even eat them in the car on the way to work or school. They’re a hearty alternative to bagels or store bought bars that are loaded with sugar. Best of all? 4 ingredients is all it takes to whip up a batch of these breakfast cookies!

I started meal planning and it’s made my life so much easier! I working on a blog post now that goes into more detail- I’ll share it soon. These breakfast cookies are a weekly meal planning staple. I make a batch of them on Sunday and Wednesday and eat them during the week as a healthy snack. They’re especially delicious with a spread of peanut butter on top!

Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Combine oatmeal, apple sauce and sugar in a bowl. Stir in chopped apples.
  2. Take a heaping tablespoon of mixture and drop on baking sheet. Press down slightly to flatten. Bake for 18 minutes. Let cool & enjoy!
