Slow Cooker Vegan Coconut Quinoa Curry Recipe

 
     My love affair with the slow cooker continues! A few days ago there was a snowstorm so I figured I’d do some experimenting. I know when you think of comfort food you probably don’t think “vegan”. This slow cooker Vegan Coconut Quinoa Curry will change that! It’s so hearty and delicious! The reduced fat coconut milk gives it an amazing creamy texture. This recipe is definitely getting added into my rotation ?
Ingredients
2 medium size sweet potatoes cut into 2 inch cubes
2 cans (15-16 oz each) rinsed chickpeas
1 (14 oz) diced tomatoes 
1/2 large onion diced 
2 cans (14 oz each) reduced fat coconut milk
3/4 cup Quinoa
1 tablespoon grated ginger
1 teaspoon turmeric
1 broccoli crown
Directions
1) Put all ingredients (except the broccoli) in the slow cooker
2) Cook on low for 5 hours, adding the broccoli in when 30 minutes remain on the timer.
