Fast & easy kale pizza

On a recent trip to Costco I came across this fresh pizza crust by Brooklyn Bred. I’ve never been too impressed with pre-made pizza crust so I usually spend the extra time and make my own from scratch. I bought the Brooklyn Bred crust because it was organic, non-GMO and from a local business (win!) I cooked it up with some kale and zucchini fresh from my garden and it was delicious!

Ingredients (serves 2)

  • Brooklyn Bred pizza crust 
  • Marinana sauce
  • Olive oil
  • Kale (2 1/2 cups)
  • 1/2 zucchini cut in 1/8 inch thick sections 
  • 2 garlic cloves (chopped up)
  • Fresh basil
  • Parmesan cheese
  • Shredded mozzarella cheese

Directions-
1) Preheat oven to 425 degrees
2) Pour a few tablespoons of olive oil in a frying pan and sauté the kale over medium heat for 3-5 minutes
3) Place the crust on a baking sheet. Thinly spread on the Marinana sauce. Layer the zucchini slices and cooked kale on top. Scatter the chopped garlic and basil on top. Add a thin layer of Parmesan cheese and then lightly sprinkle the shredded Mozarella on top. Bake for 10-12 minutes and let cool for 5 minutes.
