vegan black bean chili

I’ve been a strict vegetarian since I was 12 years old and I like to incorporate as any vegan meals into my diet as possible. This is one of my favorite! It’s easy to make, healthy and hearty!

Ingredients- 

  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tsp red pepper flakes 
  • 1 teaspoon ground cumin
  • 2 zucchini thinly sliced 
  • 2 carrots thinly sliced
  • 1 can (15 oz)  corn 
  • 1 cup vegetable stock 
  • 2 cans (19 ounces each) black beans rinsed and drained
  • 1 can (15 oz) diced tomatoes

Directions-
1) In a large pot, heat oil over medium-high. Add the garlic and onions and cook until they begin to soften- about 3 minutes.

2)  Add the carrots and zucchini and cook, stirring occasionally, until the carrots are tender- 5-6 minutes. Add black beans, tomatoes, corn, vegetable stock, salt, pepper and spices. Cook on medium heat, stirring occasionally for another 8-10 minutes.
